Rustic Carrot Cake

This is the one-layer rustic carrot cake I made very recently and served during a despedida party for a friend.  This is the cake that started my desire to try baking.  I was in college when I made my first carrot cake, which I did without the cream cheese dressing.  The recipe is pretty much standard.  I like the moistness of the cake.  The icing is just right, and the chopped walnuts balances the richness of the icing.  It’s perfect with coffee… and/or vanilla ice cream.

I should bake this again very soon.
