Fusilli ala Vodka

Here’s my take on pasta alla vodka.  If I remember my food history well, pasta alla vodka became famous in the 80′s, and it was quite a fad back then.  The dish is great!  It’s rich —with the tomatoes, cream, and cheese.  You’ll really crave for this dish once you try it.  I’ve been making this for years, and it’s a hit at every gathering.  Instead of using fresh or canned tomatoes, I have found out that sun-dried tomatoes give this dish an even deeper, more rustic taste.

The dish of course, as the title implies, has vodka.  It provides a kick on top of the creamy taste of the dish.  No worries, the vodka evaporates and should not get anyone drunk.

Ergo, Fusilli ala Vodka is a dish that kids and grown ups will truly enjoy.

Ingredients

Butter, 2 tbsp
Onion, 1 head,diced
Garlic, 4 cloves,minced
Bacon, 6 strips
Sun-dried tomatoes, 1 cup,chop
Vodka, 1/2 cup
All purpose cream, 1 cup
Edam cheese, 1 cup
Basil leaves

Fusilli noodles, 300 grams

Directions

  1. In a saucepan, melt the butter.  You can add 1/2 tsp. olive oil so that the butter doesn’t burn.  Add onion and garlic and saute them.  Add the bacon, salt, and pepper.
  2. Add the sun-dried tomatoes. You may choose to add 1 cup of tomato paste for extra flavor. After 3 minutes, add the vodka, followed by the all purpose cream  1 minute later.  Simmer in low heat for 3 to 4 minutes, adding the edam cheese on the last minute.
  3. Add the noodles and mix well.  Top with basil leaves. And add as much cheese as you want.

Enjoy!
